The origin of AOITENKA
The name of our sake and its aspiration
Enshu is a region deeply associated with the three-hundred-year history of the Tokugawa shogunate. The sake was named 《AOI TENKA》 after the crest of the Tokugawa family, in the hope that it would "conquer the world”. expresses the wish for a peaceful world where people can enjoy good sake.
Commitment to water, the life of sake
Enshu Yokosuka is blessed with the best water in the world. The source is the Akaishi Mountains in the Southern Alps. Rain and melted snow that soaked into the ground made their way to the Sea of Enshu Nada over a period of 200 years. Slowly polished subterranean water is pumped up from 120 meters underground in the brewery and used for washing rice and brewing sake.
Passion for brewing
For instance, the process of making steamed rice is not done mechanically, but in a traditional Japanese kettle to control the delicate lower limit. To achieve a flavor free of impurities, sake is also pressed in a conventional tank (funa-shibori) instead of an automatic press. Everything is done in pursuit of quality over quantity, and for the ideal sake.
