What is Funashibori?

“Fusoshibori” is a traditional method of squeezing sake that has been passed down since ancient times, and is characterized by squeezing without relying on machines. In this method, the moromi is first put into a cloth bag called a sake bag (each bag weighs about 20 kg ) (see ①), and then, being careful not to overflow the sake, pour the moromi into it. Lay the sake bag on its side and stack it (see ②) .

When the sake bags are stacked like this, pressure is naturally applied from above , so the sake is naturally squeezed.

This method of squeezing gently without applying too much pressure produces the original flavor of sake without any unpleasant taste. However, it is necessary to be careful not to overflow the sake, and since it takes longer to squeeze than machines, it is necessary to devise ways to prevent oxidation.
