What is Hiyaoroshi?
Hiyaoroshi is a sake that is aged in the early spring and shipped in autumn after being aged in the summer. It is said to have an attractive flavor and roundness of the aged flavor, and a mellow taste.
It is said that in the Edo period, when autumn arrived and the temperature in the outside air and the storage room was about the same, it came to be called "hiyaoroshi" because sake was "grated" in a "chilled" state, meaning room temperature.
